Squash and Green Beans. Squash and green beans are pan-fried in a lemon-based sauce creating a quick and easy side dish. Cut squash in half lengthwise and scrape out the seeds. Put squash, cut-side down in a baking dish.
Stir in jelly, basil, parsley, salt and pepper, stirring until jelly is melted.
Add beans and squash; heat through.

- It's of Squash (however many you want).
- Prepare of Green beans (again, you determine quantity. I like to have balanced amounts).
- It's of Garlic (I used 3 small cloves, but it's really about how strong you want the flavor).
- You need of Salt.
- Prepare of Cumin.
- Prepare of Oil (whatever kind you have on hand).
Add milk of choice to the bowl and blend to the desired consistency. If you're like me, I wouldn't mind having some variation of stir-fry on a weekly basis. Squash and Green Beans step by step
- Cut up squash and green beans to whatever size you prefer (bigger chunks cook more slowly)..
- Chop up garlic. I like mine minced so I eat it with the veggies without it being obvious in my mouth..
- Put some oil in pan and throw the garlic in so as the oil heats up, it brings out the garlic smell..
- I also added the cumin to the garlic/oil mix, but you can also add it later with the salt..
- When the garlic is sizzling in the oil, put in squash and green beans. If it looks too dry, add some water and put on the lid so it'll cook and steam at the same time..
- Open lid and stir from time to time. Also feel free to taste test the doneness..
- When it looks almost done, add salt and cumin or whatever other spices you like and mix it up..
- EAT!.
Squash once it hardens does pretty well just keeping it in a cool, dry place. It will keep for a long time that way. If you choose to freeze green beans it's best if you blanch them first, then lay them out on a cookie sheet in the freezer till they are frozen and bag. They retain the best flavor that way. Add a pinch of chili pepper flakes, and stir in the coconut cream.
